100g/4oz butter
100g/4oz caster sugar
2 large eggs
100g/4oz self-raising flour
1 lemon
1 lime
Preheat oven to 190°C/375°F/Gas 5.
Cream the butter and sugar together in a large bowl.
Add the eggs and mix well.
Stir in the grated lemon and lime zest and the juice
Mix the flour in lightly until it's just combined
Pour the mix into a greased cake tin, and bake for around 25 minutes.
Leave to cool in the tin, then turn out and enjoy!!!
