When the temperatures are below freezing, nothing beats being in a warm kitchen baking. And one of my favourite things to bake this time of year is banana bread. I have a couple of recipes I use. One is quite dense, this one is a little lighter but just as scrummy! Fresh out the oven, with a lick of butter and a cup of tea - nothing beats it. Plus it's a great way of using up over-ripe banana's!
You Need:
1 cup plain flour
1/2 cup caster sugar
3/4 tsp baking powder
1/2 tsp bicarb of soda
4 tbsp butter
1/2 cup yogurt
1 egg (large)
2 large bananas mashed
1 tsp vanilla extract
Step 1:
Preheat the oven to350F, 180C, gas mark and butter a loaf pan. In a large bowl, mix together the flour, sugar, baking powder, bicarb and a pinch of salt.
Step 2:
Mix in the melted butter and the yogurt. Then add the egg.
Step 3:
add the mashed bananas and vanilla and mix until well combined.
Step 4:
Spread the mixture into the loaf pan. Sometimes I sprinkle a mix of brown sugar and cinnamon over the top.
Step 5:
Bake for 45 mins, or until a knife comes out clean! Leave to cool for 10 mins, then eat away!
