homemade lemon curd

i have a weakness for anything lemony, making my own lemon curd has been on my 'to try' list for a long time. i finally got around to having a go and i have to say - it's DELICIOUS!! seriously, way better than shop bought stuff, perfect spread on a berry muffin :)



you'll need:
zest and juice of two lemons
2 eggs
50g butter
150g caster sugar
1/2 tbsp cornflour

in a heavy bottomed saucepan, mix together the lemon juice and zest, cornflour and sugar, then add the butter and heat gently until the butter has melted and the mixture is just beginning to bubble.

remove from the heat and slowly beat in the eggs. return to the heat, whisk continuously for 4-5 minutes until the mixture has thickened.

pour into a sterilised jar and allow to cool completely. it will keep for 1 week in the fridge {if you don't eat it sooner} i had some on strawberry and blueberry muffins = delicious!

  2. must try this I love lemon curd too! Reminds me of being a small one, we'd have lemon curd sandwiches for tea if we'd had a hige lunch that day. Much love x

  3. It's so simple :) My Mum showed me - I want to make some but never seem to have enough jars in the house - I might run some of the old pasta sauce jars through the dishwasher and get lemon curd making :)

  6. oh man, i was just thinking to myself, after buying a jar of this delicious stuff, well, sophie, how would you go about making some of this heavenly concoction? thank you! lemon curd always reminds me of my grandfather :)
