foodie post // cheese & tomato bake

this is one of my favourite supper dishes... quick & easy to make and you can mix up the veg depending on what you have lying around. it tastes delicious and all it needs to go with it is a hunk of crusty bread to mop up all the juices.

 slice the onions and courgette {zucchini}. heat a tablespoon of oil in a frying pan, add the onions and cook over a low heat for five minutes till they've softened. add in the courgettes, a clove of garlic crushed and a tablespoon each of thyme and basil. cook for another five minutes.
 layer this mix in the bottom of a ovenproof dish, then top with the tomatoes, skinned and sliced.
 cover with cheese sauce {you can use bought but i make my own - melt 1tbsp butter in a pan, add in 1tbsp flour, then slowly mix in 1/2 pint of milk. stir until thickened and add in a good handful of grated cheese}
 top with grated cheese, and bake for 30 minutes at 180C, 350F Gas mark 4.
serve with some crusty bread and enjoy :)
